Our weekly CSA delivery didn't disappoint. We're starting to get a ton more veggies, which is so lovey. This week, it was:
- Strawberries
- Snap peas
- Radishes
- Bok choy
- Broccoli
- Lettuce
- Green onions
- Garlic scapes
- Cauliflower
We tackled the lettuce and some of the bok choy first and used it to make a funky little coleslaw. It didn't have the crunch of normal coleslaw, but when you're jonesing for some slaw, you gotta do what you gotta do.
Neither Hubs nor I were familiar with garlic scapes (as amateur food snobs, we were shocked by this), but they are essentially the green tops of garlic and have a mild garlic taste to start that punches you in the nose as an aftertaste.
In need of a dip, we chopped the scapes and married them to some cream cheese with some salt, pepper and a pinch of hot sauce.
Lots of other veggies (including some of the bok choy, radishes, broccoli and cauliflower) made their way into a peanut stir fry.
Snap peas and green onions fell into a quiche for breakfast.
I'll admit, dips, stir fries and quiches weren't the most adventurous things we could have made, but cut us some slack - we're building a friggin' deck, y'all! Any suggestions?
